Tapas in Seville: salmorejo and lamb

My second stop in Seville was at La Fábrica, an old but new venture. Old because it’s been there for a while, new because the ownership changed three weeks ago.  Now Curro Noriega and Mario Ríos of Besana’s fame are in charge, and we’re oh so happy they are!


Again, I was just passing through before dinner so I had only a couple of tapas. The salmorejo with chicharrones de atún y almendras fritas (salmorejo with tuna “rinds” and fried almonds) was tasty and savoury just as I like it.

Pionono lamb

The Pionono de cordero en jugo de tomates y oloroso was a play on a traditional sweet from Granada, a sort of rolled sponge cake with pastry cream. This was lamb meat rolled around itself, juicy and fatty (in the good way), with a lighter soup and a curry mousseline sauce.

Just as their tapas at Besana, in Utrera, all the dishes were full of flavour and well done. Tapas start at 2,90€. I didn’t get to see the menu list, but they have one!
